Jollof
For the blended mix:
*3 medium bell peppers
*5 pieces of tomato (Roma)
*2 scotch bonnet pepper
*1/2 onion
For the frying:
*1/2 cup off vegetable oil
*1 large onion
*18oz (21/4 cup) Tomato paste - tin tomato
*2 knorr seasoning cubes
*2 tablespoon thyme
*1 tablespoon curry
* 2 bay leaves
*2 tablespoon salt
*2 1/2 rich cup chicken stock
*1 cup of water
*8 cups of rice
1.Step: Cut the peppers, tomtoes, onion and the scotch bonnet in crude parts and blend until smooth. Transfer the sauce into another pan and cook until the water dries.
2.Step: Take out a pan and let the oil heat up. Next put the red onion chopped into and fry 5-8 min (until fragrant). Then add the tin tomato, give it a good stir and fry again for 20 minutes. Do not forget to stir a few times so the broth does not burn.
3.Step: Add the boiled down tomato/pepper mix and stir/fry for another 8-10 minutes. Now the chicken seasoning cube, thyme, curry, garlic powder, bay leaves and salt. Stir again and add the chicken stock/or water.
4.Step: Last step is to add the washed rice, mix and add just enough water, so that the surface is covered. Cover with foil, put on the pod lid and cook for 25 minutes.
Give it a good stir and enjoy.
Chin Chin
*1/4 teaspoon salt
*1/2 teaspoon baking powder
*2 tablespoons butter
*1 tablespoon vegetable oil
*1 egg
*1/4 cup sugar
*1/2 cup malta guinness (a drink)
1.Step: Grab a bowl and put in the flour, salt, baking powder and butter. After, you mix it by using your hands as good as you can. Now that you have a distributed mixture, you have to add the oil and mix again.
2.Step: Take out another small bowl, add sugar and egg and stir. Add the mixture to the big flour mix, same with the malta guinness and knead again. Keep on doing until it is a smooth dough.
3.Step: Pour a bit of flour on the table and place the dough on top of it. Now roll out the dough and cut it small squares. Afterwards you can add a bit more flour on the cuttet pieces so that they won't stuck together.
4.Step: Now, in a pan fry the nicely cuttet pieces on medium heat until they are gold brown.
You can enjoy them with a glass of of malta, too!!

Bobotie
*1 medium onion
*2 garlic cloves
*2 tablespoons apricot jam
*2 slices of white bread
*2 tablespoons butter or oil
*2 eggs
*2 carrots
*250 ml milk
*1/2 cup of water
*2 teaspoons curry powder
*1 teaspoon turmeric
*2 bay leaves
*1 teaspoon cumin
*2 teaspoons salt
1.Step: Put the bread with the milk into a bowl, let it soak and set it aside. Chop the onion and grate the carrots.
2.Step: Now take the oil and let it heat up with the onion (4-5 minutes). Add the crushed garlic cloves and let it cook for 1 more minute. Now add the curry powder and tumeric and cook again for 1 minute. Put the grated carrots in and cook for 4/5 minutes.
3.Step: Take the beef add into the pan and cook until it is no longer pink. Season with salt, pepper and cumin. Add the apricot jam and stir. Same with the water and simmer 5-10 minutes.
4.Step: Take the bread, squeeze it out and put into the pan mixture. Mix well and spread the mixture evenly in a mold.
5.Step: To the remaining milk add another 1/2 cup of milk, salt, pepper and 2 eggs. Whisk well until combined and pour over the meat mixture. Put the bay leaves on top and bake in the oven for 30/35 minutes - 180°C
Enjoy when straight out of the oven !!
Melktert
*1 1/2 cups flour
*1/3 cup icing sugar
*pinch of salt
*125 grams cold unsalted butter
*1 egg
For the milk filling:
*500 ml milk
*2 tablespoon butter
*2 tablespoons flour
*3 tablespoons cornstarch
*1/2 cup sugar
*1/2 teaspoon almond extract
*cinnamon stick
*cinnamon
1.Step: Mix all the dry ingredients together. Add in the cold butter and mix using your finger tips. Once it looks like crumbs, add in the egg and start kneading to form form the dough into a ball.
2.Step: Shape the dough in a greased pan. Now put the dough in the freezer for 30 minutes and bake afterwards for around 25 minutes until gold brown at 180°C.
3.Step: Take a saucepan over medium heat, add butter, milk and the cinnamon stick. Bring the pan to heat unti boiling - than remove from heat.
4.Step: In a bowl, mix together flour, cornstarch, sugar and vanilla extract plus the eggs and whisk until smooth.
5.Step: Gently whisk the mixture into the saucepan and making sure no big lumps are forming. Return the pan back on the stove. Now stir constantly until it starts to bubble.
Cook for about 5 minutes.
6.Step: Remove from the heat and pour mixture into the baked pastry shell and sprinkle with cinnamon.
Now give it atleast 2 hours before serving, enjoy :))


Ghana
Fufu
*3 big tomatos
*2 bell peppers
*1 big onion
*4 garlic cloves
*1 scotch bonnet chilli
*3 tablespoons tomato paste
* chicken (optional how much you want)
*1 big piece of fresh ginnger
*1 teaspoon salt
*1 teaspoon black pepper
*1 cup Fufu flour
For the chicken and sauce:
1.Step: Take your hen, put it in a pot with some oil and season with salt and pepper. Add 1 or 2 cups of water and steam it for about 20 minutes.
2.Step: Put the tomatos and bell peppers on top of the chicken, but do not cut them. Same with the onion. Cut in in half and place them in the pot, same as with the ginger, garlics and the scotch bonnet without cutting again. Add another cup of water and lt it steam for about 10-15 minutes.
3.Step: Take out the vegeables and peel of the skin of the tomatos. It should be super easy because of the time it steamed. Put them with the other vegeables in a blender and mix until smooth. Let the chicken cook while you mix. After blending pour the smooth mix into the chicken pot and stir around.
For the Fufu:
1.Step: Take a pan and add the Fufu flour with another cup of hot water. Give the whole thing a good stir and transfer afterwards to the stove and add a tiny bit of water. Always stir until a smooth and sticky texture so you can add a bit more hot water. Keep on stiring the whole time until the mixture is sticking together and is harder to stir around.
Now you can serve the Fufu in a nicely round shape with the sauce on top. Enjoy!!
Toffee
*1 tablespoon butter
1.Step: Melt the butter in a pan and add the condensed milk. Stir the whole time to make sure nothing burns. It will become more sticky the longer you stir. It should also turn more brown, and become harder to stir/split.
2.Step: Cut the dough into smaller pieces and form either to strips or balls.
